If you don't have this product on hand, you can substitute ½ cup plus 1 tablespoon of aquafaba, or use another egg white alternative of your choice. Instructions

  1. Preheat your oven to 325°F (~165°C) then line a 8x8 baking pan with parchment paper. You can also just grease the pan if you don't have parchment paper, it just might be harder to remove.

  2. Combine 3 tbsp Animal-Free Egg White Protein and 1/2 cup + 1 tbsp Water. Stir vigorously to remove all lumps and set aside. If you don't have the egg white protein you can substitute 1/2 cup + 1 tbsp of aquafaba per batch, just be aware it might impact the final texture.

  3. In a microwave safe bowl, melt 1 cup Vegan Butter in short bursts until fully melted.

  4. Mix 2 cups Granulated Sugar, 3/4 cup Cocoa Powder, 1 tbsp Vanilla Extract and 1 tsp Salt into your melted butter until fully combined.

  5. Mix in your egg mixture into your sugar mixture and whisk for about 30 seconds so it's light and fluffy!

  6. In a large bowl add 1 cup All-Purpose Flour and optionally 1+ cups Vegan Chocolate Chips and 1+ cups Chopped Nuts.

  7. Pour your egg/sugar mixture into your dry mixture and mix until just combined.

  8. Pour your brownie batter into your lined pan and put into your preheated oven to bake for 45-60 minutes.

    If you like your brownies on the fudgier side bake on the lower end of that range, and if you like a more cake like brownie, bake on the higher end of that range.

  9. Once you're brownies are cooked to how you like them, remove them from the oven and let them cook for about 10 minutes then enjoy!

Notes & Tips

  • You can store for about 5 days covered and frozen for about 6+ months, just make sure you cut them into portion sized pieces and freeze them on a tray before transferring to a freezer safe bag/container for long-term storage.
  • If you don't have Healthier Comforts Animal-Free Egg White Protein as an egg substitute you can use 1/2 cup + 1 tbsp of chickpea liquid (aquafaba) per batch, just know it might impact the final texture of the brownies.
  • Our Vegan Butter recipe works great here, but you can use any store bought vegan butter instead.
