Instructions
Follow the steps to create 1 batch High Protein Creamy Soup Base, you can cook the onions and garlic in the same pot you use for your soup.
Fill a pot with 6 cups No-Chicken or Vegetable Broth, set to medium-high heat and bring to a simmer.
While your broth is heating, dice 6 Medium Yellow Potatoes into small bite sized pieces. If you don't like skins on your potatoes, you can peel them before you dice them. We like leaving the skins on for added nutrition.
Once your broth is simmering add your diced potatoes and simmer for about 20 minutes or until a fork comes easily out of the potatoes.
In a pan, cook 8 pieces Vegan Bacon until crispy then chop into small pieces and while you're at it chop 2 Green Onions into small pieces as well!
Add about half of your potatoes and broth to the blender along with the blended up High Protein Creamy Soup Base. Blend until completely smooth and then add back to the pot with the rest of your potatoes and broth and stir to combine.
Add most of your chopped vegan bacon and chopped green onion to the pot along with 1/2+ cup Nutritional Yeast or Vegan Cheese, reserving some of each to top your soup with. Then add 1+ cup Vegan Sour Cream and stir to mix all of this in. Cook for another 5 minutes to let the flavors meld.
Divide your soup into 4 bowls and top with vegan sour cream, green onions, vegan bacon and a sprinkle of nutritional yeast of vegan cheese then enjoy while it's hot!

Notes & Tips
- If you don't have white beans, you can just add an extra 1/2 cup of cashews to this recipe for the soup base but you'll lose some of the nutritional content that the beans bring.
- We like using nutritional yeast as our vegan "cheese" because it adds a ton of nutrition to the recipe, but feel free to use actual vegan cheese!
