Instructions

  1. Preheat the oven to 350°F (177°C). Butter and flour a 9×5-inch loaf pan or line the pan with parchment paper then allow 1/2 cup Vegan Butter to warm to room temperature.

  2. Combine 4 tbsp Healthier Comforts Animal-Free Egg White Protein and 3/4 cup Water in a bowl and mix vigorously until most of the clumps are removed then set aside to rest.

  3. In a bowl combine 1 & 1/2 cups All-Purpose Flour, 1/2 tsp Salt (if using unsalted vegan butter) and 1/2 tsp Baking Powder.

  4. Fit a stand mixer with a whisk attachment, beat 1/2 cup Vegan Butter on medium speed for about 2 minutes then add 1 & 1/2 cups Granulated Sugar and mix for another 2 minutes until fully combined (scraping down the sides as needed).

  5. Slowly pour your egg substitute into the butter/sugar mixture while mixing on medium/low speed. Beat until the egg mixture is fully incorporated, scraping down the sides of the bowl as needed.

  6. Add 1/2 cup Vegan Sour Cream and 1 tbsp Vanilla Extract, then beat until fully incorporated.

  7. While mixing on low, slowly pour the flour mixture into the wet mixture, making sure to scrape down the sides of the bowl to fully combine.

  8. Pour the batter into your loaf pan and use a spatula to evenly distribute the batter then bake for about 60+ minutes or until the center is completely set and a skewer or tooth pick comes out cleanly. If your cake is browning too quickly cover with aluminum foil and continue baking.

  9. Allow to cool in the pan for about 10 minutes before transferring to a cooling rack. Once cooled, top with mixed berries, whipped cream or whatever else you desire!

Notes & Tips

  • You can substitute aquafaba for the Animal-Free Egg White Protein, personally we haven't tried it in this recipe so we can't attest to how it will turn out, but we've tried it in other baked goods and it works well as a substitute it will just impact the final texture.

  • If the top of your cake starts browning too quickly, cover with aluminum foil and continue to bake.
